  2. CARROTS – WHITE,YELLOW,PURPLE • Carrots are the second most popular vegetable in the world after the potato • Carrots are important for healthy eyes, skin, hair, growth, and immune systems • Carrots can lower cholesterol, prevent heart attacks, and reduce the risk of certain types of cancers

  3. CARROTS – WHITE,YELLOW,PURPLE • Orange carrots are the norm in the United States • Other colors do exist – • White • Yellow • Purple • These other colors of carrot are raised primarily as novelty crops.

  4. WHITE CARROTS • WHITE CARROTS are considered as having the least health benefits of any color carrot due to lack of pigment • Phytochemicals in these carrots can help reduce the risk of cancer and stroke • The dietary fiber in these carrots help fight against colon cancer.

  5. YELLOW CARROTS • YELLOW CARROTS yield sweeter flavor at maturity • Retain healthy texture • Accumulate xanthophylls, pigments similar to beta-carotene, that support good eye health as they are absorbed as Vitamin A in the body
