Separate Commission A separate committee will be established: Committee membership has been established representing countries with a bona fide Master Chef Program Experts from Austria, Germany, Netherlands Switzerland, USA and Asia will be on the committee. All Experts are already GMC (Global Master Chefs) The commission reviews existing programs and develops the criteria for the program WACS GMC

    4. Reason Why GMC Giving Master Chefs reciprocal recognition throughout the world by professionals and by the public. Encouraging more countries to establish such a Program. Providing more education to chefs. Raising the professional Standards of the Culinary Arts.

    5. The Concept: The WACS GMC Committee identifies such WACS member countries that run already a high quality, bona fide Master Chef Program includes: Proper Preparation Examinations With Global Master Chefs Judges

    6. How the process works: Interested countries will send the survey and later their application and their Master Chef Curriculum to the WACS Master Chef Committee, Documentation will be evaluated against established criteria, the interested country allows a WACS appointed commissioner to observe the final Master Chef examinations and

    7. Successful candidates : Will be awarded with: the WACS Global Master Chef Diploma, the WACS Global Master Chef Pin the WACS Global Master Chef Chain, and become a member of the WACS Global Master Chef Council, and will be registered in the WACS GMC Roll.

    8. WACS Board Decision The WACS Board has sanctioned this idea and the program for the WACS Global Master Chef at their meeting in San Antonio and Paris and will give its full support.

    17. WACS GLOBAL MASTER CHEF HIGHEST ATTAINABLE CERTIFICATION

    18. CRITERIA Applicants must have successfully passed the comprehensive examinations of a Master Chef in a WACS approved member country, whose standards and guidelines have been reviewed and approved by the WACS GMC Committee

    19. CRITERIA Applicants must document a minimum of 8 years professional experience to be certified as a WACS GLOBAL MASTER CHEF (GMC) Applicants must be a member of a National Chefs Association, which is a member country of WACS Passing of the respective theoretical and practical examinations are a fundamental requirement

    20. WACS GLOBAL MASTER CHEF EXAMINATION APPLICANTS for WACS GMC MUST DEMONSTRATE MASTER CHEF LEVEL COMPETENCIES IN THE FOLLOWING SEGMENTS:

    21. MASTER CHEF EXAMINATION CULINARY THEORY CULINARY PRACTICAL GENERAL MANAGEMENT PRINCIPLES SPECIALITY KNOWLEDGE CATEGORY

    22. CULINARY THEORY FUNCTIONAL AND QUALITY ASPECTS OF INGREDIENTS METHODS OF PREPARATION KNOWLEDGE OF BAKING AND PASTRY KNOWLEDGE OF BUTCHERY SANITATION AND HYGIENE

    23. CULINARY PRACTICAL CLASSICAL CUISINE INTERNATIONAL CUISINE BAKING AND PASTRY BUTCHERY MISTERY BASKET

    24. GENERAL MANAGEMENT PRINCIPLES SUPERVISORY SKILLS FISCAL MANAGEMENT ACCOUNTING QUALITY ASSURANCE STAFF MANAGEMENT/SCHEDULING COUNTRY SPECIFIC BUSINESS LAWS/REGULATIONS MARKETING

    25. SPECIALTY KNOWLEDGE CATEGORY DIETETICS AND NUTRITION BEVERAGE SERVICE PURCHASING MENU PLANNING

    26. EXAMINATION CRITERIA PRACTICAL TEST Preparation of a five course menu or mystery basket, including dessert. Candidate must provide a work plan and time table WITHIN A PRE APPROVED TIME ALLOTMENT Judging to follow WACS culinary guidelines

    27. CRITERIA THEORETICAL EXAMINATION CANDIDATE WILL BE TESTED ON A VERBAL AND WRITTEN BASIS ON A BROAD SCOPE OF ISSUES, REGARDING: CULINARY THEORY MANAGEMENT THEORY SPECIALTY CATEGORY KNOWLEDGE

    28. PASSING CRITERIA PRACTICAL EXAMINATION 10% ORGANIZATION, TIMELYNESS, HYGIENE AND SANITATION 20% MIS-EN-PLACE, FOOD UTILISATION, WORKSKILLS, PREPARATION 40% TASTE 30% PRESENTATION CANDIDATE MUST earn A MINUMUM OF 50% OF AVAILABLE POINTS

    29. PASSING CRITERIA FOR THE THEORETICAL EXAMINATION Candidate must demonstrate knowledge in: Written examination Verbal examination Candidate must earn a minimum of 50% of available points

    30. Certification process The respective country president and chair of the master chef/culinary committee must certify that the WACS developed criteria was followed and that the candidate has passes the examination The WACS Master Chef Committee can, at its discretion, observe the examination
