Unit Objectives (单元目标) • After learning this unit, you should • ——understand the types of banquet service; • ——master the basic words and expressions about banquet service; • ——get some cultural knowledge about banquet service ; • ——find ways to improve your writing skills about letters of complaints ; • ——be familiar with some Chinese & Western dishes.

  3. Background Knowledge 背景知识 • Types of Banquet Service 宴会服务类型 • It’s important to decide on the type of service used at a banquet. Each service costs differently from another. • 1. Plate service (also known as American service): It is the most common form of banquet service. The food is at the kitchen and waiters send the plates to the table from the left to the guest. At the end of the course, the plates are picked up from the right. • 2. Russian service: It is also called platter service. Food is served from platters and waiters work as teams. They place food items on the diners’ plates. • 3. French service: It requires much space between tables for waiters to move around. With this service, a gueridon (餐厅里上菜服务用的小桌子)is set at the table side and food is prepared on the gueridon. • 4. Preset service: It is a faster service that is often for lunches. The first course of soup, salad or appetizer is set on the table before the guest arrives. • 5. Buffet service: It is a display of food items on table stations, so that attendees can select food for their own. This service may combine with other styles. For example, a banquet may begin with a buffet and then a sit-down dinner served plate style; or the first and deserved courses are served by waiter and the main dishes buffet style.
