  4. Purpose • To develop TWO completely new & innovative desserts made from dairy products for senior citizens • Each dish should provide: • “High” calcium • “High” fiber • Approximately 200 kcals • Have a desirable appearance • Have an appealing taste and texture

Requirements • Each dessert must contain at least 2 : • Skim milk • Plain low-fat yogurt • Fat-free sour cream • Acidopholus milk • Low-fat cottage cheese • Juices may also be added • Each dessert should contain at least 50% dairy • Limit $20 for additional ingredients • Refrigerator/Freezer Stable

  6. Calcium • The most abundant mineral in the body • ≥99% total body calcium stored in bones & teeth • Body cannot produce it • Needed for: • Proper function of the heart, muscles and nerves • Blood vessel contraction & expansion • Secretion of hormones & enzymes
