  1. Heat transfer across surfaces We have seen earlier that surface tension is affected by surfactant concentration and surface tension gradients cause flows. This means that momentum transfers at and across surfaces Now we will see that heat transfer takes place across surfaces

Heat Transfer Across a Balloon’s Surface • When a flame is applied to a balloon with just air, heat is transferred into the latex of the balloon and this heat is unable to be transferred into the air inside the balloon quick enough to keep the latex from melting. This results in the balloon popping. • When a flame is applied to the balloon with water in it, the heat is transferred into the latex of the balloon and then into the water due to the high heat conductivity and heat capacity of the water. Since the heat is dissipated from the latex into the water, the latex does not become hot enough to melt and the balloon will not pop. • This same principle helped GIs in past wars in boiling water in palm or plantain leaves or any other sort of plant leaf. Since the heat is transferred through the leaf into the water, the water can boil without burning the leaf.
