Slice eggplant into½inchrounds, top witha slice oftomatoand a slice of Mozzarella.Bakeat350 Fonan oiled cookiesheet until eggplant issoft and cheese ismelted(about10 – 20 minutes).
Heat1Tbs.olive oil inasmallskillet. Addminced scallions and sauté for 5-8 min until completely wilted. Setasideto coolfor 5min. Cuttomatoesinto bite size chunks, pour scallions with warmoilover, sprinklewith saltand
pepper, stirandenjoy a wonderful tomatosalad.
Heat 1 Tbsp.oliveoilin a large skillet. Add4cups thinly sliced zucchini. Sauté untilcrisp-tender (about5–7minutes).Add 14½oz canstewedtomatoesand stir until heated through. Tryalsowith1 cupfrozencorn.Also try sautéing the zucchini withonionandgarlic formoreflavor. Sprinklewith1-2 Tbsp.Parmesancheese.
Whencooking potatoesfor mashedpotatoes, addgarlic cloves to water. Mash together withpotatoes. Use2 Tbsp.lowfatsourcream along with fat free milk for flavoring potatoes.

pepper flakes, and½ tsp limerindto 1Tbsp. heated olive oil.Add sliced greens (spinach,collard greens, bok choy, kale) andcook untilleavesare tender.

Mix thawed frozengreen peasanddicedcucumber withchopped green onion andchoppedmint. Mix with plain nonfat yogurt orasmallamountoflowfat sourcream.
Combine1 cupeachcubedeggplant(preferably Japanese),zucchini,onions,redandyellowpeppers. Tosswith1 Tbsp. garlic flavoredolive oil. Roast at 425for 20 to 30minutes untilvegetables are soft and caramelized.Serve hotorcold.
