They’re a delicious side dish that adds texture and flavor to any meal.   3. how to make roast potatoes? • Ingredients: • 1 kg potatoes • 110 ml oil (like safflower, sunflower or peanut oil) • 1 ½ tbsp flour • 1 ½ tsp salt • Instructions: • Step one: Crank that oven dial to 220°C. • Step two: Grab those Desiree or Pontiac potatoes, peel them, and chop them into uniform-sized chunks (around 1 inch wide). Now dip those spuds in cold water for about half an hour. • Step three: Drain the water and fill it up again making sure the water level is about 2 inches above those spuds. Chuck in a pinch of salt, then whack it on high heat and boil the water for about 10 minutes. The idea is to parboil the potatoes and make them a bit tender. Once done, drain the water. Give them a good rattle to fluff them up around the edges. This is to create a heap of loose bits that'll turn the spuds into golden crispy roasted potatoes after the oven time. However, just a couple of shakes will do the trick, no need to go all out with the shaking. • Step four: In the preheated oven, place a metal tray with the oil you’ll be using. Take it out from the oven after 5-6 minutes and carefully add the potatoes to it. Turn each one in the oil ensuring they’re properly coated. Sprinkle salt and pepper. Also, add some flour (a small amount at a time) and coat the potatoes evenly. Once done, lay the potatoes on a baking sheet in a single layer for optimal roasting. • Step five: We’re almost there with our crispy roasted potatoes. Chuck those beauties in the hot oven and let them roast away for about 45 minutes. Keep an eye on them till they're crispy and golden brown. Don't forget to give them a flip halfway through, so they brown uniformly. • Step six: Once cooked, transfer the crispy roasted potatoes onto a plate, with some paper towels to soak up any extra oil, and get ready to serve. Just a heads up - the crunchy texture of the crispy roasted potatoes stays intact for about half an hour. So make sure to dig in while they're at their prime. However, if you can’t, reheating is the way to go. Pop the crispy roasted potatoes back in the oven at around 220°C for approximately 15 minutes.
