Made from potatoes and capsicum, stuffed capsicum recipe stole Angeline’s heart. She prepared it at the weekend for her family. Stuffed capsicum requires few capsicums. For filling the capsicum, one may use any preferred vegetables. Angeline’s favorite is potatoes.
She stuffed capsicums with potatoes. For preparing the filling, fry some onions in oil, add a pinch of turmeric, cumin seeds, red chillies (if desired), salt, coriander seeds, and mustard seeds. Add boiled potatoes when the onions turn golden brown. Cook for few minutes, till the whole mixture looks smooth and consistent.
Next, scoop out the capsicum and fill them with the above-prepared mixture. Now cook the capsicums on a low flame in a frying pan with some oil. The delicious stuffed capsicums would be ready in few minutes. Angeline Bakkila relished her stuffed capsicums with rice and Indian bread.
