  2. About Us At Happy Herbalist, we believe that food is our medicine and medicine our food. We have studied Kombucha, Kefir, Ginger Beer, Caspian Sea Yogurt, and other Probiotic Drinks not only for their flavors but to enhance their medicinal effects by using recommended teas, herbs and spices. It is important to know How to safely make functional foods at home. Our library is an ongoing endeavor to understand what are the cautions, as well as the benefits.   3. Jun Jun is becoming more popular in the United States. This is probably due to its close association with Kombucha. In some ways Jun is easier to make than Kombucha.  Some ways harder. Jun is closely related to Ginger Beer due to both ferments being one principally of a Lactobacillus ferment. 

  4. A rare cousin of Kombucha, Jun is a naturally fermented effervescent tea made with organic honey. It is abundant with probiotics and organic acids. Jun is fermented with honey instead of sugar that is used in traditional Kombucha. The result is a lighter and smoother taste than typical kombucha which has a vinegar note. Most people find that Jun is more approachable. 

  5. Kefir Kefir’s tart and refreshing flavor is similar to a drinking-style yogurt, but it contains beneficial yeast as well as friendly ‘probiotic’ bacteria found in yogurt. The naturally occurring bacteria and yeast in kefir combine symbiotically to give superior health benefits when consumed regularly. It is loaded with valuable vitamins and minerals and contains easily digestible complete proteins.

  6. Water Kefir Water Kefir, also known as Japanese Water Crystals, are very similar fermenting in water or juices instead of milk.  Ferment time is usually 12-24 hours. The grains are not the same, being smaller in size and more fragile. Produces a sweeter ferment (more sugar) and more alcohol. Does provide some nutrition and digestive health benefit.

Ginger Beer, Water Crystals and Kombucha can be fermented with anything that you have in your kitchen. It really does not matter to the Kombucha SCOBY. It is, a matter of preference. Most fruits contain sugars (fructose) that will ferment when combined with wild or airborne yeasts and bacteria, such as Cane Sugar, Beet Sugar, Sucrose, Fructose, Glucose, Raw Sugar, Brown Sugar, Turbinado sugar, Sucanat, Syrups and more.
