Recipes with Quinoa Black Bean Mango Quinoa Salad • Ingredients: • 2 cups quinoa4 cups water1 mango, diced1 can black beans, rinsed and drained1 red pepper, diced1 green pepper, diced1/2 red onion, diced1 small bunch of cilantro, chopped finethe juice of 1 lime1 teaspoon cumin1 teaspoon kosher salt1/4 cup olive oil • Directions: • Cook quinoa according to package directions with water. Add all other ingredients to a large bowl. • When quinoa is cooked, add to large bowl and stir to combine. Let set for about 15 minutes before serving so that the flavors can combine.
