Unlike competitive controls that always run on a “low” setting (bypass), the SIT control is snap-acting and adjusts all the way from “high” to “off” depending on the food load and temperature setting.   19. Cooking Without Boundaries: Flame Safety • What is it? • Commonly referred to as “Flame Failure,” it’s not as mysterious as it sounds. It’s been a requirement for years on all concealed burners in North America. • It’s already in use in range ovens and thermostatic griddles. • It’s a safety device which ensures no gas can flow to a burner when there is no ignition (pilot) source present. • Already a requirement in many other countries, flame failure systems, (all burners), are gaining acceptance in North America as various levels of government make them mandatory in schools and other institutions.

Cooking Without Boundaries: Flame Safety • How does it work? • A flame safety system consists of a safety valve, a thermocouple, and a pilot flame. • The pilot flame and thermocouple together produce a current, (millivolts), that powers an electromagnet in the safety valve, holding the valve open, and allowing gas to flow. • Should the pilot flame go out, no current is produced, and the magnet releases the valve, allowing it to close and prevent gas flow.
