WAGYU?   Japanese Wagyu Beef is pure-blooded cattle - either black, brown, shorthorn, or polled - with a distinct flavour and marbling due to the type of feed and length of time raised. Regular beef cattle do not gain the intramuscular fat that Japanese Wagyu Cattle do. The cattle themselves live as stress-free a life as possible, with their lives closely monitored in open-air farms to ensure they are as Zen as possible.

  2. To say that Japanese Wagyu Beef is well-marbled is equivalent to saying that Disney World is a theme park. While this is correct, it is also a massive understatement. Japanese Wagyu Beef is buttery, melt- in-your-mouth tender, succulent, and rich. It has the texture of perfectly cooked pork belly, but the beef flavour is unlike anything you've ever tasted, even if you've had the most expensive tomahawk or t-bone steak. A bite of Japanese Wagyu Beef coats the tongue in the same way that scotch does. Japanese Wagyu Beef is consumed in smaller quantities due to its richness and, let's face it, its high price. This type of Wagyu is best shared with friends and eaten with other flavours to balance and enhance the richness of the beef. To pair with the beef, experiment with acids, salt and pepper, spicy, garlic, and sweet flavours. Don't forget to include some plain, white, sticky rice.

  3. Japanese Wagyu Beef can be prepared and enjoyed in a variety of ways. Teppanyaki sears the outside of a piece of beef before cutting it into slightly smaller strips - still at least 1 inch thick on all sides - and sears the cut sides as well. Yakiniku style consists of extremely thin slices cooked over high heat for a short period of time. Japanese Wagyu Beef should not be cooked for an extended period of time and should never be cooked past medium doneness. This is done to ensure that you get the best flavour and fat amalgamation. Japanese Wagyu Beef is not a steak in the way that Canadians and Americans consume steak. In this case, bigger is not better. Eating a lot of Japanese Wagyu Beef can make you lose sight of the quality and uniqueness of the Wagyu flavour and texture.
