  2. Step #1 Before you begin, sanitize work area. Click ongreenarrow to go forwards

  3. Step #2 Gather ingredients and cooking equipment. • Potatoes • Large colander • Cutting Board • Knife • Pan release spray Click ongreenarrow to go forwards or red arrow to backwards

  4. Step #3 Place potatoes in a colander. Click ongreenarrow to go forwards or red arrow to backwards

  5. Step #4 Scrub potatoes with a vegetable brush. Place in a steam table pan or lexan. Click ongreenarrow to go forwards or red arrow to backwards

  6. Note: Potatoes can be cleaned the day before and stored in the refrigerator. Click ongreenarrow to go forwards or red arrow to backwards

  7. Step #5 Cut potatoes into wedges byplacing potato on the cutting board and cut potato in half. You may also use your fruit slicers to cut the potatoes into wedges. Click ongreenarrow to go forwards or red arrow to backwards

  8. Step #6Cut potato half into wedges by cutting potato halves into four pieces. Click ongreenarrow to go forwards or red arrow to backwards

  10. Step #8Placepotatoes on prepared sheetpan. Pour ¼ cup olive oil blend on potatoes. Note: 25 whole potatoes cut into wedges will fill a sheet pan. Click ongreenarrow to go forwards or red arrow to backwards

  11. Step #9Season potatoes with 1 ½ teaspoon salt and ¼ teaspoon pepper. Toss potatoes with gloved hands or spoon to evenly coat the potatoes with oil and seasonings. Potatoes should be in a single layer. Click ongreenarrow to go forwards or red arrow to backwards

  12. Step #10Place potatoes in a 350oF oven and bake for approximately 20-25 minutes until tender and golden. Halfway through baking stir potatoes so they brown evenly.To test tenderness of the potatoes, stick a paring knife into a potato wedge. The potato should be tender and pierce easily.
