  2. There are generally three types of coffee filters: stainless steel,aluminumorpaper(thoughcoffeedrinkerslookingto addsomeblingtotheirkitchenmaypreferagoldfilter). Paperfiltersreducetheamountoffinecoffeebitsthatend upinyourcupandarethemaindifferencebetweenmetal andpaperfilters.Coffee’sbodyormouthfeelwillbethicker whenfinerground.Inadditiontothefines,thecoffeealso has an additional touch of bitterness, so French press coffeesoftenhaveastrongerflavorthanautomaticcoffee filterbrews.

Paperfiltersremovetheoilsfromcoffeeaswell.Youmaynoticethat yourespressocupcontainsafewdropsofoilafteryouorder.Similarto darkroastingcoffees,darkroastcoffeeisroastedsothattheoilsare brought out, resulting in an oily sheen on the beans (you should be careful though, since the oily sheen is a sign of staleness in medium roast coffee). Flavors and aromatic compounds are present in coffee oils, which make coffee taste better. What’s more, does the brewing processextractallthenecessarycompoundsandinfusethemintothe water through the evaporation process, or does it require them to be presentduringthebrewingprocess?Weconductedatastetestaftera quickgooglesearchdidnotprovideconclusiveresults.

  4. Two very different cups ofcoffeecameoutofthe paper and the stainless steel cup(right). Ourpreferredmethodofbrewingcoffeeis theAeropress.Webrewedtwocupsusing theexactsameratioofcoffeetowater(our standard 16 grams to 170 mL and a two minute steep time). In order to make the firstcup,weusedtheAeropress’sstandard paper filters. In the second cup, we used the stainless steel filter we recently acquired from Able Brewing in the United States.

  5. Namrataforegoestraditionalcuppingmethodsandplungesin withadouble-fistedapproach. Whataretheresults?Incomparisonwiththepaperfilter,thestainlessfilter coffee had a much more pronounced body, while the mouthfeel of the stainlessfilterwassofter.Additionally,stainlessfiltercoffeewoninboththe taste and appearance categories. In spite of the excellent quality of both coffees,thestainlessfiltermadeapleasingcupbecauseitreducedaciditya littlewhileenhancingchocolateflavors.Comparedsidebyside,thecoffee made with the paper filter tasted much cleaner and balanced. We can imagine coffees where this balancing effect would be welcome, but we preferredtheboldnessimpartedbythemetalfilterinthisparticularcoffee, whichwasgroundandsundriedfrompulpfromKalladavepuraEstate.

  6. Inadditiontofiltersusedin Aeropresses, filters usedin coffee machines and other brewing equipment have a similar effect on the taste of coffee. When it comesto these equipments, youhave the choice of choosing from filters such as white bleached paper or natural paper filters to cloth, steel, or goldfilters.
