In a big oven or large soup pot, heat the oil. Cook onions for five minutes or until they are transparent. Add the garlic and continue to cook for 2 minutes. Add the stock, pumpkin, squash, curry, nutmeg, red pepper, and other seasonings. Stir and heat until simmering. After about 15-20 minutes, reduce the heat to a simmer, and cook the squash until it is fork-tender. In tiny batches, puree the soup in a food processor or blender. Put your soup back in the pot after it's nice and creamy. Reheat it over medium heat, then stir in the coconut milk as well as any additional salt and pepper that might be required.
