  3. Working Hours • Sunday • 8 am – 8 pm • 8 am – 1 pm: Buffet Menu Only • Buffet offered for families who want Sunday Brunch • 1 pm – 8 pm: Regular Menu • Monday – Saturday • 11 am – 10 pm • Regular Menu • 78 hour weeks

  4. Employees and Wages • 7 on at a time, 19 on staff • 2 cooks @ $10 = $20/hr • 2 waitresses @ $8.50 = $25.50/hr • 2 dishwashers @ $6.25*= $12.50/hr • 1 hostess @ $7.75 = $7.75/hr • * = license to have sub-minimum wage workers

  5. Costs for Employees • $65.75 an hour • 78 hours a week x $65.75 = $5,128.50 a week • 4 weeks x $5128.50 = $20,514 a month • 12 months x $20,514 = $246,168 a year

We want to give people good food at a reasonable price in a simple atmosphere
