  1. Panellets, the traditional Autumn almond cakes in Catalonia Many families use to make their Panellets on the 1st of November. Almond is the basic ingredient

  2. Ingredients for the basic dough: 1kg smashed almond (powder) 800 gr sugar 400 gr boiled potato The peel of one lemon

  3. Ingredients to decorate the basic dough balls 200 gr pine nuts 100 gr cherries 100 gr quince jelly 100 gr coconut You can decorate the cakes with everything you want

  4. How we do make Panellets ? First, we boil and smash the boiled potatoes. Make it very smooth

  5. Put the smashed almond in a big bowl

  6. Add the sugar

  7. Add the smashed potato

  8. Grate the lemon peel and add it to the dough

  9. Mix all the ingredients well

  10. Once the basic dough is made, we divide it into 4 parts. One part will be used to make coconut panellets, The second part is for pine nuts ones. The third one is for cherry ones. The fourth part is for quince panellets.

  11. We make small balls and we decorate them

  12. We decorate the balls with the different ingredients: coconut, quince, pine nut or cherry.

  13. The different kind of panellets are ready to be cooked.

  14. We brought the panellets to the baker’s to be put into the oven.

  15. The next day we went to the baker’s to pick our panellets up.

  16. Look at them: they look , smell and taste delicious !

  17. Parents also could taste our panellets. They did taste very good !
