Chapter 63 Carbohydrates
Purpose • In this experiment, unknown carbohydrates (fructose, glucose, maltose, lactose) will be identified using two classification tests. To distinguish between aldehydo- and ketosugars sensitive red tetrazolium (RT) test is employed. If the RT test is positive, Barfoed’s test allows to distinguish between mono- and disaccharides
Comments • Follow pp. 770-771(microscale). • Follow the lab handout for all experimental procedures. Wearing rubber gloves is necessary during this lab. You will work with toxic and corrosive compounds. • Carry out two classification tests to disclose the structure of each unknown carbohydrate.
Safety • Red tetrazolium may be harmful if inhaled, swallowed or absorbed through the skin. Skin, eye and respiratory irritant. Toxicology not fully investigated. Wear protective gloves and goggles. • Copper salts are harmful is swallowed. May cause irritation of respiratory system, do not swallow or inhale dust.
