Carbohydrates - a large group of primary products of photosynthesis, which are aldegydes and ketoalcogol • Carbohydrates are divided into: • Monosaccharides - trioses, tetroses, pentoses and hexoses; • Oligosaccharides - disaccharides, trisaccharides and others; • Polysaccharides - homo-and heteropolisaccharides

Polysaccharide – constitute macromolecular carbohydrates -- biopolymers, formed a large number of monosaccharide related O - glycosidics connections • Homopolysaccharides (starch, inulin, cellulose and its esters, glycogen) are composed of one type of residue monosaccharys • Heteropolysaccharides (mucus, gums, pectin, alhinaty) - with the remnants of various polysaccharides and their derivatives

  4. Homopolisaccharides - polysaccharides that are built with the same monosaccharides Depending on the hydrocarbon component of their share in: • Glucans - amylose, amylopectin, cellulose, glycogen, dextrin, chitin; • Fructans - inulin; • Galactans - agar-agar, carrageenan

  5. Glucan • cellulose- a component of plant cell membranes. Its content depends on the type of plant. Cellulose positive effect on intestinal peristalsis, normalizes digestion. It is not digested in the human gastrointestinal tract and has a large adsorbing capacity • Dextrin is a low-molecular glucan, which formed by splitting starch or glycogen under the influence of enzymes, acids or heat. Dextrin formed in the body of animals and plants during the enzymatic dissolution of spare carbohydrates. Dextrin shows emulsifier properties and is used for the production of oil emulsion and as a cementing agent in some tablets masses.

  6. Glucan mixture of Amylose and Amylopectin contains starch. Pharmacopoeia allows use multiple types of starch • potato starch - Amylum Solani, which is obtained from potato tuber: • wheat starch - Amylum Tritici from wheat-summer, or soft; • corn starch - Amylum Maydis from grain with common corn • rice starch - Amylum Oryzae from grain of rice seed. Starch is formed by photosynthesis in leaves of green plants. under the influence of the enzymes amylase and phosphorilase converted to soluble compounds and that come in different organs (seeds, fruits, tubers), accumulat in the form of starch grains, specific shape and size for each plant.

  7. Starch grain consists of:   Amylose   Amylopectin. • The composition of Amylose is 60-300 (to 1500) residues of alpha-D-glucose, linked1,4- glicosid connection, forming linear polymers. Amylose is contained within the starch grains. Dissolved in warm water, iodine solution, tinge in blue. • Amylopectin has a much higher polymerization - 3000-6000 (to 20000) of glucose residues linked 1,4 - and 1,6-glicoside connection and form branched polymers. It focuses on membrane starch grains, dissolved in hot water to form viscous colloidal solution, a solution of iodine tinge in red-violet color.

Застосування: • виготовлення щільних поживних середовищ для культивування та діагностики бактерій; • як драглеутворюючий засіб в харчовій промисловості; • агароза є носієм при гель-хроматографії, афінній хроматографії, електрофорезі на гелях, імунодифузії та імуноелектрофорезі; • входить до складу деяких лікарських засобів як допоміжна речовина або ентеросорбент

  17. Карагінан – група нерозгалужених сульфованих полісахаридів, молекула яких побудована із залишків похідних D-галактопіранози із строгим чергуванням альфа-1,3- і бета-1,4-зв’язків між ними. Для промислового використання карагінанів використовують червоні водорості. Застосування: • харчовій промисловості як стабілізатор білкових розчинів; • фармацевтичній практиці; • косметології

  18. Гетерополісахариди • Слизи – це гетерополісахариди, які часто утворюються у водоростях, рослинах родин мальвових, подорожникових, айстрових, льонових. Уворюються в результаті переродження живих клітин і тканин, тобто природного біологічного процесу. • Класифікація: За походженням і утворенням слизи поділяються на такі групи: • Слизи, які утворюються в рослинах шляхом слизового переродження клітинних оболонок; • Слизи, які утворюються шляхом ослизнення живих клітин; • слизи водоростей; • слизи бактерій За хімічним складом їх можна поділити на чотири групи: • Глюкоманани; • Галактоманани; • Камедеподібні слизи; • Слизи злакових

  19. Сприяють утворенню слизу • тепло, • волога, • світлова енергія. Полісахариди служать для рослин резервуаром води, захисним біоколоїдом. • Способи отримання. Вилучають слизи з сировини шляхом розчинення у воді. Крохмаль не розчиняється у воді, його вимивають з тканин холодною водою.

  20. Заготівля. Багаті слизом корені алтеї, листя подорожника, насіння льону, сланей морської капусти ламінарії. Слизи і камеді легко ослизняються у воді, тому сировину слід збирати в суху погоду. При необхідності камеді швидко миють в холодній проточній воді. • Сушіння. Сушать тонким шаром при хорошій вентиляції і частому перемішуванні. Оптимальна температура сушки 50-60°С. • Зберігання. У сухому місці. При зволоженні сировина відволожується, пліснявіє, прокисає, темніє, уражається мікроорганізмами. • Застосування. Обволікаюча, пом'якшувальна, протизапальна, ранозагоювальна дія. Застосовуються при хворобах носоглотки, бронхітах, захворюваннях кишечника. Встановлено, що деякі полісахариди підвищують імунітет, володіють крововоспинними властивостями.

  21. Камеді є кальцієві, магнієві і калієві солі високомолекулярних кислот, що складаються із залишків гексоз, пентоз, метилпентоз і уронових кислот. До складу камеді входять:гексози: D-галактоза і D-манноза; пентози: L-apaбіноза і D-ксилоза; метилпентози: L-рамноза і L-фукоза;уронові кислоти: D-глюкуронова і D-галактуронова кислотиКамеді отримують при штучній підсічці рослинних тканин.Джерелом камеді служать стовбури абрикоси, астрагалів, деяких акацій.

  22. Фізико-хімічні властивості Камеді- переважно ексудативні продукти, які утворюються на місцях різних випадкових (природних) дефектів або в результаті штучних дій на рослину. Камедь позбавлена смаку, але деякі з них мають солодкуватий, рідше - гіркуватий смак. Вони нерозчинні в етанолі, ефірі, хлороформі та інших органічних розчинниках (це їх основна відмінність від смол і речовин каучукової природи). Будучи гідрофільними речовинами, камедь розчиняється у воді, утворюючи розчини, що займають середнє положення між дійсними і колоїдними розчинами. Деякі камеді у воді розчиняються не повністю або тільки набухають. Розповсюдження в природі.Камедь часто утворює дуже складні рослинні ексудати, змішуючись з дубильними речовинами (таніно-камедь), смолами (камедесмоли), смолами і ефірними маслами (ароматичні камедесмоли). • Камеді в медицині зазвичай застосовуються як емульгатори.

  23. Пектиниє полісахариди клітинних стінок. Основним компонентом пектинових полісахаридів є поліуронові кислоти. У вищих рослин вони складаються із залишків D-галактуронової кислоти • Пектинові речовини є вельми важливим компонентом рослинних клітин, хоч і складають незначну частину клітинних стінок (не більше 5%). • Застосування. У фармації пектин застосовують як цінний допоміжний продукт при виготовленні ряду лікарських форм (у емульсіях - як емульгатор, в пілюльних масах - як зв'язуючий компонент і ін.)
