  4. Dialogue One At the table (I) Wang: Mr. Smith, please sit here. This is our traditional seat for the guest of honor. Smith: Thank you. I’m much honored to be given so much attention. Wang: Would you like to use chopsticks or fork and knife? Smith: I’d take chopsticks. As the saying goes, “When in Rome, do as the Romans do.” Wang: What would you like to drink? We have wine, beer and Maotai, the best liquor in China. Smith: I have heard so much about your Maotai. It is quite strong, isn’t it? Wang: Yes, rather. But it doesn’t go to the head as most liquors do. Smith: OK, I’d like to try it.

Smith: Well, Chinese cuisine is famous the world over. We have been looking forward to having a real Chinese meal. Wang: Now, Shall we start the ball rolling? Let’s have the cold dish first. Smith: A cold dish? It looks like a peacock to me. Wang: It’s an assorted cold dish arranged in the shape of a peacock.   6. Dialogue Two • At the table (II) • Wang: Mr. Smith, please don’t stand on ceremony. Help yourself with some seafood. • Smith: OK. I’m fond of seafood. It’s fresh and tasty. I see your cook takes care of color, flavor, and taste all at the same time. • Wang: Yeah. Real Chinese cuisine places stress on the color, smell, taste, and sound. Oh, here is Roast Beijing Duck. • Smith: We have heard a great deal about the famous Beijing Duck. Someone says that it’s a shame to leave China without doing three things------ going to the Great Wall, eating Beijing Duck and drinking Maotai. • Wang: The duck is roasted over a slow wood fire until the skin becomes brown and crispy. Then the chef cuts it into small pieces. Please put pieces of meat on this thin pancake, spread some brown bean sauce and some chopped spring onions on top, and then roll it up. It tastes best when piping hot. • Smith: How delicious! Tender and crisp.
