If celiac disease or gluten intolerance is suspected, a blood test will be done to detect antibodies or serological markers. The diagnosis is completed with a biopsy of the mucosa of the small intestine to detect possible atrophies in the villi. Once celiac disease has been diagnosed, treatment consists of removing all gluten-containing foods from the diet. For an accurate diagnosis, always resort to professionals. Is It the Same as Sensitivity? No. There are people with gluten sensitivity, and yet they are not celiac. These patients feel bad after consuming foods with gluten and show improvements after following a gluten- free diet. The symptoms presented are more diffuse: fatigue, joint pain, cramps, or weight loss and their diagnosis is more difficult. If that's your case and you want to check if you have gluten sensitivity, try to remove it from your diet to see if these symptoms disappear. If they do, try to consume gluten foods, and if a relapse happens, you'll get an idea about your sensitivity for this protein. If so, non-celiac gluten sensitivity is diagnosed and treatment is the same as in celiac disease. Alternatives Gluten is not an indispensable protein. For this reason, it's best to opt for foods that are gluten-free or that, if they do have it, its formulas are not as altered. For example, you can opt for rice, which, despite the attempts, is a cereal that is not easily "manipulated". Also, cereals like millet, buckwheat, and grains such as quinoa or amaranth can also be included in this diet. Lastly, when consuming gluten, it is better to opt for one that is organically produced with the highest quality standards.
