  2. Purchase Specifications: “Spec’s” • Include all relevant details necessary for multiple suppliers to provide comparable bids • Establish quality and cost control standards • Help avoid misunderstandings between vendors, salespeople, buyers, and chefs

  3. What might be included in a purchase “spec”? • Intended use of product • Examples: tomatoes to be used for • Tomato and fresh buffalo mozzarella salad • Pico de gallo • Grilled breakfast tomatoes • Marinara sauce • Tomato and lump crabmeat napoleon

  4. What might be included in a purchase “spec”? • Exact name of the product • Examples: • Roma tomatoes • Yellow beefsteak tomatoes • Red tear-drop tomatoes
