Food preparation (EU Reg 2092/91) • It is necessary to grant at least 70% of organic ingredients; the traditional ones are included in a very short list • The respect of short lists of additives and natural aromas which are harmless • Grant the separated processing, identification and traceability of raw materials

PROCESSING UNITVisit in the Starting Phase Product requirements • % of the organic ingredients and their type • additives and processing aids (restricted positive list) • OGM and their derivatives are forbidden Theprocessing recipe must: guarantee 70% at least of organic ingredients Non-organic ingredients must be necessarily among the ones included in a very restrictive list of ingredients (part C of Annex VI) recognized by the EU as non available on the market on a suitable quantity.

STANDARDS Composting of manureReg. 2092/91Does not directly addresses specific requirements for compostingFactory farm manure is forbidden NOP § 205.2 Terms defined Directly addresses with specific requirements for composting such as time and temperatures Compost. The product of a managed process through which microorganisms break down plant and animal materials into more available forms suitable for application to the soil. Compost must be produced through a process that combines plant and animal materials with an initial C:N ratio of between 25:1 and 40:1. Producers using an in-vessel or static aerated pile system must maintain the composting materials at a temperature between 131F and 170F for 3 days. Producers using a windrow system must maintain the composting materials at a temperature between 131 F and 170 F for 15 days, during which time, the materials must be turned a minimum of five times. There are no source restriction on manure
