Many farmers market foods often cost the same or less than store bought foods and most even take food stamp and WIC benefits! Lentils with Carrots Serves 6 (150 calories per serving) Ingredients: 3 cups water ½ teaspoon salt 3 cups finely diced carrots 1 bay leaf 1 cup dried lentils 1 tablespoon butter 2 cloves minced garlic 1 tablespoon lemon juice ¼ cup minced fresh onion black pepper, to taste Directions: Combine water, carrots, lentils, garlic, onion, salt, and bay leaf in a saucepan. Bring to a boil, reduce heat, and simmer 25 minutes. Drain water off. Discard bay leaf. Stir in butter, lemon juice, and black pepper. What’s In Season?
