•Turmeric powder - ½ tsp •Salt - ½ tsp •Cumin powder - 1 tsp •Coriander powder - 1 tsp II. Method 1.Let’s make the marinade for the eggs first. In a bowl, take some ginger-garlic paste, turmeric powder, red chilli powder, cumin powder, coriander powder, salt, and mix them all well. 2.Add the boiled eggs and coat them well with the mixture. 3.In a saucepan, take some oil and heat it. Once the oil is heated, place the coated eggs and saute them. The eggs will turn light brown. 4.Take another saucepan and heat some oil in it. Add cumin seeds, green chilli, and chopped onions. Saute till the onions turn translucent. 5.Once done, add the ginger-garlic paste, turmeric powder, red chilli powder, coriander powder, cumin powder, and salt. Mix well. 6.Then, add the water and mix gently. Add the chopped tomatoes and crush them gently to make the gravy slightly thick. 7.You will see that the oil starts separating from the curry. Add the sauteed eggs into it. Mix the eggs with the curry and cook for a bit. 8.Add a pinch of Kasturi methi and some chopped coriander leaves before giving the curry a gentle mix. 9.Prepare the tempering by heating some oil and then adding some asafoetida, mustard seeds, fenugreek seeds, Kashmiri chilli powder, and curry leaves. The curry leaves will start to crackle. 10.Pour this tempering over the egg curry and garnish with chopped coriander leaves before serving.
