  2. Antioxidants… • Increase cognitive performance, reduce or slow CNS deficits in aging (Joseph et al. 1999; Prior et al. 1998) • Provide cancer chemopreventive activities, protection against stroke damage, beneficial effects on brain function (Rimando et al. 2004)

  3. Fresh and dried fig samples homogenized in methanol and 60% acetone adapted from Brand-Williams et al., 1995

  4. Supernatants were aspirated. Homogenates were centrifuged.

  5. Antioxidants react with free radicals ΔAbs 515 nm

  6. Samples were compared with Trolox (water-soluble vitamin E analogue) in each solvent Trolox Standard Curve

  10. Conclusions • Figs contain antioxidants; some dried figs may contain as much as green tea! • More investigation on this topic may reveal a marketable health benefit to consumers to eat more figs!
