The dynamics of this industry vary greatly among various regions and countries basis the regional taste preferences, dietary habits, culinary traditions, and sector demand. This small-scale processing system in developing countries generally employs conventional or semi-conventional methods, but products need to contest with those of the systematized dairy industry (large-scale manufacturers or multinationals).
