Biscuits 4 cups all purpose flour 2 T. plus 2 teaspoons baking powder 1/2 teaspoon baking soda ¼ tsp. of salt 6 oz. frozen butter, shredded 16 oz buttermilk1.Combine and sift the dry ingredients. Gently knead in the butter.  Add the buttermilk and knead on a floured board just enough to bring the dough together.2. Form a flat rectangular mass with the dough and cut into squares leaving the biscuits intact (do not separate).  3. Place them on parchment paper on a sheet tray and brush with heavy cream; place into a preheated 400-degree oven.

Gravy 1 pound ground breakfast sausage. 4 tablespoons butter 8 tablespoons all purpose flour 6 cups cold milk Salt and pepper to taste • Sauté the sausage until it is cooked and has released as much of its fat as possible.  • Add the butter and melt it.  Then add the flour a little at a time over medium heat, constantly whisking. • Add the milk a little at a time, whisking till it simmers, add more milk and continue the process • When you reach the desired consistency add salt and pepper to taste.

  7. Pancakes 1 lb. flour 2 Tbsp. Sugar 1 Tbsp. Baking Powder 1 ½ tsp. Salt 24 oz Buttermilk 2 oz. Melted Butter 3 eggs (beaten) • Sift the flour, sugar, baking powder and salt together. • Combine the buttermilk, melted butter and eggs and add them to the dry ingredients. Mix just until the ingredients are combined. • Coat griddle with clarified butter place 2 oz of batter on griddle • When bubbles appear on the pancakes surface and the bottom is browned, flip the pancake to finish cooking

  8. Potato casserole • 8 large Potatoes baked
