  1. Recipe Purani, Twist Naya! A land of rich heritage, vibrant culture, and luscious greens. Punjabi folks and foods are quite alike - full of life, zest, and strong robust characteristics! One such larger than life Punjabi dish is the Amritsari Chole Masala- like a chest full of flavours layered with taste, aroma and zest!Chole, like its states people, is also quite amicable - in a sense that it can literally pair well with practically anything and everything. For instance, eating chole with steaming rice is not bad but eating it with a puri or a paratha is even better & eating it with my personal favourite - Kulcha with a dollop of ghee is most definitely better than the rest!We share with you recipe of the classic Amritsari Chole with a flavour that is not yet discovered. Ingredients - 1.Kala Chana (soaked) - 250 grams. 2.Onion - 2 3.Tomato (pureed) - 2 4.Green Chilli - 2 5.Ginger Garlic paste - 1 tbsp. 6.Butter (Salted) - as per requirement. 7.TFT Amritsari Chole Masala - 1 ½ tbsp 8.TFT Cumin seeds - 1 tsp 9.TFT Cumin powder - ½ tsp 10. Dry Mango powder - ½ tsp 11.TFT Coriander powder - 1 tsp 12.TFT Turmeric powder - ½ tsp 13.TFT Chilli powder - 1 tsp 14.Salt to taste 15.Water (as per requirement) 16.Oil (as per requirement) 17.Coriander leaves (chopped) Method - 1.Soak the chana overnight or for 8–9 hours before using it to make the Amritsari Chole. 2.In a pan, heat the oil. Add bay leaf and cumin. Add onion, green chilli, and ginger garlic paste once they begin to sputter; sauté till translucent. 3.Add tomato puree and salt to taste when tomatoes are soft and mushy. Add all the dry ingredients - salt, TFT turmeric powder, TFT chilli powder, raw mango powder, Amritsari chole masala powder, TFT coriander powder, TFT cumin powder, and sauté for 1-2 minutes.

  2. 4.Now stir in the cooked chana. As needed, add more water. Maintain a moderate flame while bringing it to a boil. Cook it for three to five minutes. 5.Lastly, add chopped coriander leaves as a garnish. See, that wasn’t hard now, was it?
