  1. Masala Bhaat Recipe A delicious Maharashtrian rice and vegetable recipe. Ingredients: 1.Basmati rice soaked1 1/2 cup 2.Goda masala 1 teaspoon 3.Tendli 15-20 4.Coriander seeds 2 teaspoons 5.Cumin seeds 2 teaspoons 6.Dry coconut (khopra) grated 1/2 cup 7.Dry red chilies 4-5 8.Oil 2 teaspoons 9.Bay leaf 2 10.Green cardamoms 5-6 11.Cloves 7-8 12.Turmeric powder 1 teaspoon 13.Salt to taste 14.Small brinjals 3-4 15.Cashewnuts fried 12 16.Scraped coconut 2 tablespoons 17.Fresh coriander leaves chopped 2 tablespoons

Instructions: 1.Cut the brinjal into quarter and keep them soaked in salted water. 2.Repeat the same with the tendlis. 3.Place a non-stick pan over medium heat. 4.Once it is hot, add oriander seeds and cumin seeds and dry roast till fragrant. 5.Once cooled, blend them in a mixer. 6.Now, add coconut to the pan and roast until brown 7.Take the coconut and add to blender or mixer. Add red chillies and a little water and grind to a paste. 8.In a non-stick pan, add oil. Once hot, Add bay leaves, green cardamoms and cloves and sauté for ½ minute. Add brinjals, tendlis and turmeric powder and mix well. 9.Now, add the paste and saute well for about 3 minutes. Now, add the rice and stir. 10.Now, add three cups of hot water and salt to taste. Stir well. 11.Then proceed to add the good masala and stir. 12.Add half the fried cashewnuts. Cover and cook till the rice is done.
