Ingredients • 1 Cantaloupe • 3 egg yolks • 3 egg whites • ½ cup white sugar • ¼ tablespoon salt • 8 tablespoons all-purpose flour • 2 tablespoon water • ¼ teaspoon butter flavored extract • 6 tablespoons white sugar • 1 tablespoon butter • ¼ teaspoon cream of tartar • 1 (9 inch) baked pie crust

  3. STEPS STEPS • Take a fresh, good-quality cantaloupe and cut in half.

  4. • Remove the seeds. Take a saucepan and scoop the pulp into it.

  5. • Cook the pulp over medium heat until it comes to a gentle (rolling) boil.

  6. • Mash the fruit as it heats.

  7. • Take a bowl and mix salt, flour and ½ cup sugar.

  8. • Add this mixture to the mashed cantaloupe and stir it until it gets thick.

  9. • Make sure you get the correct consistency.

  10. • Take a large bowl and beat the egg yolks in it.

  11. • Add water and a little bit of the cantaloupe mixture to the yolks to heat them.

  12. • Add the egg yolk mixture to the heated pulp and stir it until it gets thick and creamy.

  13. • Add butter and flavoring to the mix and pour it into baked pie crust.

  14. • Beat cream of tartar and egg whites together in a separate bowl until the mixture becomes frothy.

  15. • Add 6 tablespoons of sugar and continue beating.

  16. • As soon as thick peaks form, stop beating and top the pie with the egg white mixture.

  17. • Bake the pie at 205 degrees C until the top turns golden brown.

  18. Tips • First taste the Cantaloupe before making a pie. Sometimes cantaloupe is not fresh. • Add Sugar as per your taste.
