  2. LEONARDO OLIVE OIL •Red chili powder •Chat masala •Lemon juice Method: •Start by boiling oatmeal in water. Post boiling, keep it aside till it reaches room temperature. •Add everything from the ingredients except for the oatmeal, boiled rice and crushed cornflakes the mashed potato and mix well. •Post mixing everything nicely, add the oatmeal and boiled rice to the potato mixture and mix again •Start making the cutlets by diving the mixture, rolling them into balls and flattening them into cutlets. •To make the cutlets crispier, spread some crushed flakes onto a plate and coat cutlets with them •Pre-heat your air-fryer and once preheated, place the cutlets in it. Air-fry them at 180 for 15-20 minutes while turning them around twice to evenly cook them. •If in case you do not have an air fryer, take a wide non-stick pan and heat 2-3 tbsp of olive oil in it. •Place the cutlets in the pan and shallow-fry them on low- medium flame until they are roasted to light golden brown in colour on both sides. •Serve hot with the sauce of your choice. Caramalized Broccoli Though broccoli does not happen to the be the favourite of most, this recipe might just change that for many people. A side dish that comes in handy with every meal and is utterly delicious and healthy, this is something that everyone should try making for sure. LEONARDO OLIVE OIL •Fresh Cherry Tomatoes 7-8 •Olives 10-12, pitted and sliced •Sliced capsicum - 1 •Black Pepper, freshly ground •Chopped fresh herbs of your choice •Apple Cider Vinegar- 1 tsp •Red Wine Vinegar-1 tsp •Extra-Virgin Olive Oil - 1/4 cup Method •Start by heating olive oil in a pan and add the sliced onions to it. •To caramelize the onions, add honey and salt and cook till the onions are evenly coated with the Honey and become pinkish in colour. •Add the sliced Garlic, salt, sesame seeds the diced Broccoli into the onion mixture and sprinkle some water to let it steam. •Wait 6-8 minutes before adding the Olives and Cherry Tomatoes •Wait till the water evaporates and the broccoli turns crunchy •Now add the freshly ground Black Pepper and the herbs you chose and mix once before turning off the burner. •Take the pan off the burner and drizzle some Apple cider vinegar on it before transferring the dish onto a serving bowl. •Garnish by sprinkling some sesame seeds, a drizzle of honey, red wine Vinegar and extra virgin olive oil and finish with sliced capsicums. This deliciously simple and absolutely fresh sauce can be had with whole-wheat pastas and even multi-grain breads to bring out the amazing flavour of the basil in the best way possible. LEONARDO OLIVE OIL Ingredients: 1 cup of basil leaves, loosely packed 1/4 cup of pine nuts 1/4 cup grated Parmesan cheese 1 clove of garlic 1/2 cup Extra Virgin Olive Oil Salt to taste Method: In a food processor add every ingredient apart from the extra virgin olive oil and pulse a few times to coarsely chop the ingredients. Post this, put the food-processor on a low speed setting and drizzle in the extra virgin olive oil slowly. Do this till the time the mixture becomes a paste. Taste the pesto and add more salt if necessary. Note: If you cannot find pine nuts, then you can also substitute unsalted pistachios for them.
