  2. What Is Ghee and Is It Actually Healthy? Ghee is a type of clarified butter made from cow’s milk. “Clarified” means it’s been heated and purified. In a way, it is butter, but broken down in a way that gives it a distinct, nutty flavor and a more flexible structure. It also has no milk or water solids, which is why it doesn’t need to be refrigerated like normal butter does. Ghee can withstand high temperatures during cooking. Why, exactly? Because it is pure butterfat—the natural fat found in milk, butter, and other dairy products. Ghee has a smoke point of 482° F, while butter and coconut oil come in at 347°F.
