  2. Day One • Fill out paperwork • Get training manual • First day will be spent working the tempura line and viewing as many dishes as possible. It is important to gain the most amount of information to ensure your knowledge • Speak with manager at the end of the shift to discuss what dishes were seen and answer any questions.

  3. Day two • Train on the robata station. Make sure to ask chef Jason any questions about the vegetable line and write down any information that may be useful. • Go over day one and day two material. Make sure to prepare for questions to be asked regarding previous days material. • Sit down with a manager and go over grilled vegetable area.

  4. Day Three • Train on the robata grilled steak side along with Chef Jason Alfred. Make note of any information that is not in your training packet. • Take a test on day one, two, basic info., and the floor chart material • Talk with a manager to follow up on previous days training.

  5. Day Four • Train on the line with Jason. He will explain dishes and you will be asked to run them to tables. If you are unsure, please ask for assistance. • Sit down and talk with a manager about the previous shifts and tonight. The manager will ask questions so please prepare as if you were taking a test. • Study for tomorrow’s quiz on tonight’s material

  6. Day Five • Train on the sushi line. Ask and write down any information that you will find useful knowledge on the floor. • Take the robata grilled entrée portion of the test. • Talk with a manger. • Clock out

  7. Day Six • Take an open table quiz with a manager. • Follow a food runner. • Learn and take notes on seat numbers. • Talk with a manager about tonight. • Take quiz on sushi items and sauces

  8. Day Seven • Train on the dessert line. Write down any information that you will find useful. • Follow a food runner and ask any questions that you feel unclear about. • Train with Monica polishing glasses and seeing the quality that glassware needs to be on the table. • Talk with a manager about any issues, concerns, or uncertainty.

  9. Day Eight • Train behind the bar • Ask bartender any questions about cocktails • Sit and talk with the manager about tonight’s training • Take a quiz on desserts • Study for tomorrows drink test
