What is the “Food Handling BMP”? • BMP – Best Management Practices • Cleanup, maintenance, and record keeping • Covers All Food Handlers • Restaurants, schools, nursing homes, etc. • BMP Participation Assists City/Business • Helps assure city/business compliance • Cuts city/business costs & reduces liability

  3. Target? • FOG – Fat, Oil, & Grease • Both plant & animal origin • All foods have it • FOG Is Everywhere • Handle All Foods the Same

  7. Why Should I Care? • FOG Clogs Pipes, Causes Overflows • Health/Environ. Problems • Backup into Facility (THD shuts you down) • Plumbing Costs • Grease Hauler Costs • Liability – backup into homes • City Enforcement – fines plus cleaning costs • City Maintenance Costs – pass on to rate payer

  12. BMP Requirements/Specifics • Employee Training • Must know the reasons for BMP • Must know about the grease trap • Must know the specific practices in BMP • Signs in the Kitchen (provided by City) • Easy to understand • In a language workers understand

  13. Kitchen BMPs • All Solids Must Go In The Trash • Must Dry Wipe/Scrape Plates, Trays, Utensils, & Pots/Pans(Solids=Trash Can!) • Floor Drains Must Have Screens/Traps • Dry Sweep Floors First (not over drains) • Clean Up Spills Immediately Into Trash
