  1. The Flavors of the NorthEast - Masor Tenga or the Assamese Fish Curry When we talk about Pan Indian cuisine, we often tend to skip the recipes of the Northeast! Today, we are bringing you a delightful recipe from the beautiful state of Assam. Like the other 6 Northeastern states, Assam is known for its rich culture and an array of exemplary dishes, which are not much popular with the mainland. The dish Masor Tenga is a delicious fish recipe that makes you want for more. So here's how to make Masor Tenga: Ingredients: ● 4-5 pieces Rohu Fish ● 3 tbsp. Sundew refined sunflower oil ● 1/2 tsp. fenugreek seeds ● 1 onion, chopped ● 1 tsp. ginger-garlic paste ● 2 tomatoes, pureed ● to taste salt ● 2 green chilies, slit ● 1/2 tsp. turmeric powder ● 1 tsp. lime juice ● 1 tbsp. coriander leaves, chopped © 2020-2021 All Rights Reserved, No part of this document should be modified / used without prior consent. Method: Step 1: Clean the Rohu fish and cut them into sizable pieces Step 2: Marinate the fish pieces with turmeric and salt for 15 minutes Step 3: Heat Sundew refined sunflower oil in a pan and fry the fishes till they turn golden brown Step 4: Remove the fishes from the pan and in the same oil temper fenugreek seeds for a minute. Step 5: Add onions to the pan and saute until they turn transparent Step 6: Add chillies, ginger garlic paste and turmeric powder and saute for a minute Step 7: Add the tomato puree and salt to taste and cover the pan Step 8: After a minute, add a cup of water and bring the gravy to a boil Step 9: Add the fried fishes to the gravy and let the gravy and simmer it for 5 minutes Step 10: Garnish the Masor Tenga with coriander and lime Serve it hot with rice or roti!
