Brinjals sauteed in oil are then added to a sour, tangy flavoured gravy and served with steamed rice. Let us take you through the delightful process of making Enna Kathiriaki Kulambu with sunflower oil manufacturers in TamilNadu. Ingredients 1. Sundew refined sunflower oil 2. Dhania Seeds - 1 tbsp 3. Bengal gram - 2 tsp 4. Urad dal - 1 tsp 5. Fenugreek seeds - ¼ tsp 6. Dry red chillies as per your preference 7. Grated coconut - 5 tbsp 8. Cumin seeds - ½ tsp 9. Black Pepper - ¼ tsp 10.Water as per required 11.Tamarind (1 tbsp ) soaked in hot water 12. Brinjal - 250 grams 13.Mustard Seeds - ½ teaspoons 14. Curry leaves 15.Asafoetida - a pinch 16.Turmeric powder - ¼ tsp 17.Jaggery powder - 1 tsp 18.Salt as per taste. Method 1. In a small saucepan, heat 2 teaspoons of refined sunflower oil over low heat.Add the chana dal and fry till it turns a light brown colour. Add the urad dal and wait till the colour changes. 2. Now, add the coriander seeds, black peppercorns, cumin seeds, and red chillies. Fry it for some time until it turns ambrosial. 3. Add the fenugreek seeds, poppy seeds, and grated coconut. 4. Switch off the flame and let it cool down. 5. Once the mixture has cooled down, add it to the blender and blend it till it turns into a smooth paste. 6. Rinse the brinjal and cut it from bottom to the top. 7. Heat 3 tbsp of Sundew refined sunflower oil and add in the mustard seeds.

  2. 8. Once the mustard has tempered, add in the curry leaves, a pinch of asafoetida, and the brinjal. 9. Saute the brinjal till the colour changes, and then add in the turmeric powder. 10.Add the blended masala paste to the brinjal and mix well. Once it's mixed, add the tamarind water. 11.Add water if you feel the gravy is thick. 12. Lower the flame, season it with some salt, cover the pan, and cook it. 13.Cook till the brinjals are cooked. To check, poke the brinjal with a knife or fork; it must pass through softly. 14.Once the oil starts to float on top, the gravy will thicken. If needed, add a tablespoon of jaggery once the gravy has thickened. 15.Add a handful of chopped coriander leaves and switch off the flame. 16.Your enna kathirikai kolabu is ready to be served with hot steamed rice.
