The SafeOrganic project aims to reduce antibiotic resistance levels in organic pigs, ensuring safer, high-quality products with fewer antibiotic-resistant bacteria. Led by Søren Aabo, the project examines AR cross-contamination at slaughter and its correlation with antibiotic consumption. Sampling methods include colon content and carcass swabs, with results to be presented at the closing seminar in Copenhagen. Collaborating countries are Denmark, Sweden, France, Italy, and the Czech Republic.
