  2. maintained yearround.Wineryoperationssuchas destemming,pressing,fermenting and agingtakeplacewithinthecool environment ofThe Caves, whilebottling isdonedirectlyoutsideusingamobilebottlingline.During harvest,6to8tonsof grapesadayareprocessed.Thismayseemlow but it isduetothefactthatharvestinghoursarebetween7amtonoononanygivenday.Grapesarehand pickedand loaded intohalfton bins,transferred tothe winery bytractorandthenmoved byforklift tothedestemmer.White winestakearoundthree weeks toferment at50°F and arebottledinFebruary,whileredvarietalsferment fortwoweeksand arebottled inearlyJune.Allskins,seedsand stemsarecompostedand returned tothefields.SlowmonthsforourwineryareJune,Julyand Augustwith thebusiest timebeing September.The winerywillproduce3000-5000casesannually. • Vineyard&WineryBackground: • Located atthenortheastern tipofthe Carmel ValleyAppellation,thefamily-owned HolmanRanchresidesapproximately12milesinland fromthePacificCoast.Immersed inhistoryandromance,theranchhasnot onlyproventobeanexcellentgrowing locationforourvineyardsbut alsofortheTuscanvarietal olivetreeswhichhaveflourished underthetemperateclimate. • Ourestate-grown winevarietalsareplantedonapproximately21acresofundulatingterrain. • The winesproduced areunfined and craftedtodeliverthetruevarietal ofthegrapefromharvesttobottle. • The climateandterroiroftheappellationhasplayedacriticalpart inthesuccessofour wines.Thewarmthofourinland valleycoupled withthecooling marinelayerhasestablisheditselfasanideal microclimatefortheproductionofPinot NoirandPinot Gris. OurBurgundyCloneshavethrived fromtheperfectblendofidealclimate,southernexposureand thinrockysoils. • Holman Ranch Tasting Room: • HolmanRanch’sCarmel Valley tasting roomoffers theperfectbackdrop toswirl, sip andsavorthedifferent complexitiesof HolmanRanchVineyard andWinerywines.Thereissomethingfor everyone(4varietalsinfact),fromthefull-bodied Pinot Noirstothe light,fruityflavorsofourPinot Grisand lightlyoakedChardonnay.HolmanRanch alsooffersestategrownand bottledOliveOil availablefortastingand purchaseattheTastingRoom. • TheTasting Roomshowcasestheestate winesof HolmanRanchwhich includesourPinot Noir,Pinot Gris,Chardonnay,SauvignonBlanc,andRoséof Pinot Noir. Carefullyhand-harvested,coldpressed and bottled,theExtraVirginOlive Oil produced fromthefruitsofourTuscantreeshasadelightful spicefollowed bya butteryfinish. • Threetasting flightsof three wineseach(White,MountainandPinot Noir) areavailable7daysaweek.TheTasting Room alsoholdsaseriesofcooking demoscalled InYourBackyard.Formoreinformation,call (831) 659-2640. • OliveGrove: • HolmanRanchhasitsowndistinctiveolivegrovelocated onasouthfacinghill ofourvineyard.Thegroveiscomprised of100treeswithmultiplecultivars planted. Thesecultivarsconsistof25Frantoio,25Leccino,10Mission,25Coratina,5Pendolino,and 10Picholine, allofwhichwereoriginallyplantedin2194inaCarmel Valleyorchard thenreplantedatHolmanRanchin2007.Thesematureolivetreesallowed us toproduceoliveoil rightaway.Theyareplanted inshaleforthebest productionand harvestingresultspossible.Weharvest ourfruit byhand inDecember,whichisthenmilled,producing asuperb,highquality product.Althoughthe OliveGroveisnotcertified organic,wedoemployorganicpracticeswhenfarming ourtrees.Ourmill,however,iscertified organic.Aninteresting factisthatolivetreesare alternatebearing,whichmeansthat oneyear theymayproduce650,375ml bottlesworthofoil, whilenext year theymay produce only50,375ml bottles.
