  1. CHALLENGES AND PROSPECTS OF FOOD SCIENCE AND TECHNOLOGY What are the challenges and prospects of food science and technology in India? Recent surveys and discussions have suggested that there are many challenges and prospects arising in this emerging science and technology. One of the biggest challenges is the ever-increasing population in developing countries, the increasing urbanization and the rapid industrialization in developed countries. These three trends have posed many challenges for food scientists and technocrats. The population explosion in China has triggered a huge surge in the demand for products like vegetables and fruits. This has meant increased farming productivity and rising manufacturing costs. The resulting gap between supply and demand has led to the slowing down of food technology. Some developing countries have limited access to capital and advanced technology, while others lack the resources. In such context, it becomes imperative that developed countries take steps to support research and development in developing countries, especially in nutrition. The other major challenge is the unequal allocation of technology between the developed and developing world. Technological advances have often been given priority over the needs of developing countries. Despite the fact that some of the technological advances in the food science and technology sectors in developed countries have helped the poor to produce and eat food, these advances are not available to the poor in the less-developed countries. It is true that some promising technologies such as genetic engineering and nanotechnology hold promise in providing solutions to some of the problems related to nutrition. However, there are several other challenges and prospects in this growing field. One of the challenges is that the public and private sector in developed countries is slow in adopting new technologies. The slow pace of adoption by the public sector can result in ineffective or inefficient use of R&D budgets. Moreover, there is a delay in the deployment of improved strategies by the developed countries. This can result in a loss of time as well as money. Another challenge is the inadequate access to technology and tools in the developing countries. It has been argued that food science and technology are incomplete without access to the appropriate technology and tools for proper processing of food products. Lack of expertise in food science and technology means that it takes longer to get products to the market. This can have significant implications for the food safety and quality control of the products. Also, the infrastructure needed to process food products is insufficient in most developing countries. The third challenge and the prospect is related to access to funding. As food science and technology have become more prominent, organizations within the developed nations have increasingly provided financial support for research and development in this discipline. However, there is a delay in getting this money from these organizations. In addition, there is a limited amount of financial support from the developed nations that can be dedicated to specific food technology and projects. These three challenges and prospects also have answers that relate to the attitudes of both developed and developing countries concerning science and technology. The US has been an important contributor to the global effort to promote science and technology. The US president George W. Bush has made science a priority for his administration. The national laboratories and other agencies providing research and development assistance to the country are seeing increased enrollment as a result of this policy.
