The group encompassed restaurants, bars and pubs across the North Adelaide and Norwood region employing approximately 70 employees. Within 3 years, he successfully built Trim Hospitality from a start-up business to $5m with significant and sustained increases to gross profit and EBITDA. Apart from that, Matthew Trim successfully acquired and turned around many poor performing businesses to become award winning restaurants. He successfully managed strategy, operational planning, project management, operations, finance and people management across various group assets which included – The Banque Bar, North Adelaide, SA Queens Head Hotel, North Adelaide, SA Farina Kitchen and Bar, Adelaide, SA The Manse Restaurant, North Adelaide, SA Sparrow Kitchen and Bar, North Adelaide, SA Grace the Establishment, Norwood, SA Matthew Trim identified and acquired poor performing food and beverage operations that possessed potential for improvement, and established relationships with diverse stakeholders during the acquisition of properties. He also negotiated leases and contracts
(freehold pricing > $3.3m with leases up to $250k per annum). Further, he liaised with interior designers, architects, engineers and councils to communicate vision for establishments in order to target demographic and brand strategy. Talking about his financial management duties at Hospitality Group, he managed P&L performing weekly analysis, and led steady increases to gross profit% through optimising operating costs and overheads. When it came to marketing, he designed, developed and executed various marketing strategies and campaigns across multi-channel digital and social media avenues which helped achieve significant brand visibility and recognition. Prior to founding and serving as the Managing Director/Operations Director of Hospitality Group (2003 - 2014), Matthew worked with Trims Retail, Adelaide, SA, as a Retail Operations Manager from 1998 to 2003.
