12.3.1 CHINA ❖ A majority of the Chinese population is dealing with iron and zinc deficiency, which has resulted in increased cases of anemia and neural tube defects. The following has in turn accelerated the demand for the use of premix in fortified food staples such as wheat and rice with added iron, zinc, and folic acid. As per Cambridge University data in 2019, nearly 245 million of the population are affected by anemia, and 208 million of the following were owing to iron deficiency. Moreover, of the estimates around 75% of the affected population belonged to the rural areas. ❖ China is also emerging as a production hub for fortified food, able to meet nearly most of the local demand, including fortified infant food.
