  9. Effects of environment on proteins • Alanine (hydrophobic) this is in water- first this amino acid was dry but in water they clump together. • Alanine in oil spread out and try to get exposed • Glutamic acid (hydrophilic) when in water it spreads out. • In oil this amino acid clumps together.

  10. Glutamic acid and Valine Glutamic acid in water will stretch out in a long line Valine in water would scrunch up in a small ball and clump together
