  2. The Tagine or tajine is a typical dish of North Africa, especially in Morroco. The dish has been named after the ceramic pot in which the dish is cooked. It is also widely known as marqa or maraq. There are several food ingredients found in the Morrocan cuisine that promote good health as the foods are freshly prepared with whole food ingredients, flavored with spices and herbs instead of deep-frying.   3. The Origin of this special dish The traditional Morrocan masterpiece was first prepared during the Harun al Rashid ruling time. In the present day, the earthenware pot and the traditional broth are mainly prepared in North Africa and Middle-east. There are various kinds of ways to prepare Tagine. In the traditional style (Qirda Style), clarified butter (Saman) is used to lubricate the pot's surface, and after that, finely chopped onion is added for aroma and flavor; whereas, in the Muqawlli cooking style, the above ingredients are placed in the Olive oil to enhance the overall flavor.

The traditional tagine pot are glazed or painted, mainly comprises two parts that are a dome-shaped lid or cover, which sits on the pot base during cooking and a flat circular base, which has low sides. The cone-shaped cover is specially designated to return all condensation to the bottom. This process can be enhanced by adding cold-water into the well that is at the top of the cover.

  5. Tagine is mainly cooked over hot and large bricks and charcoal due to its ability to stay hot for a longer time. However, in today's cooking style, the pot is placed over the electric stove or on the gas oven. But the low heat is necessary to keep the broth simmering gently. This dish is very much popular in the Tangier region in North Africa.

It has the cast-iron bottom and people can use it on the electric oven or gas and cook dish in high-temperature that permits browning of meats and veggies before cooking. This brings about the best taste to the traditional food cooked by many.
