A Little Bit About Butternut Squash: • Creamy, nutty flesh • Most popular variety of winter squash • Hard shell gives it a long shelf life • Shape often compared to a long pear or a bowling pin • Dark-orange flesh is delicious roasted, steamed, or sautéed, and served in chunks or pureed for a soup or pasta filling • Good source of iron, riboflavin, and vitamins A and C Click ongreenarrow to go forward or red arrow to backward

  3. Step #1 Gather the following items: • Pre-Diced Butternut Squash • Olive Oil • Kosher Salt • Black Pepper • Sheet Pans and Parchment Paper

  4. Step #2 Sanitize your work area. Gather your ingredients and supplies.

  5. Step #3 In a large bowl or steam table pan combine the following ingredients: 10# bag of pre-diced butternut squash ½ cup olive oil 2 tsp Kosher salt 1 tsp ground black pepper

  6. Step #4 Place the squash on a sheet pan lined with parchment paper. Place sheets pans in a 350 degree oven. Roast for approximately 20 minutes.

  7. Step #5 Serving = #16 Scoop Serve warm on the serving line.*CCP = Maintain a holding and serving temperature of 140°F or higher. Click onthered arrow to backward
