The Nutritional Value of Potatoes Potatoes are also known as aloo in India and are scientifically classified as Solanum tuberosum. The nutritional value of potatoes includes being a carbohydrate-rich food, rich in protein, calcium, and low in fat, with a high content of ascorbic acid. It consists of 80% water and 20% dry matter in freshly harvested potatoes. Let's examine the various types of potatoes found in India India is the world's second-largest producer of potatoes. There are various types of potatoes available in the market, produced in different states of India, such as Sindhuri, Chandramukhi, Jyoti, Lauvkar, Badshah, Bahar, Lalima, Jawahar, Sutlej, and Ashoka.
