  3. Day 1 - Dough • 2 ¼ tsp. Yeast • ½ tsp. Sugar • ⅓ c. Warm water (105°-110°) • 1 c. Cold water • 3 ½ c. Flour, all-purpose • 1 ½ tsp. Salt • 1 ½ T. Oil

  4. Day 1 – Directions (Pizza Dough) 1. In a small bowl, dissolve yeast and sugar into warm water, until foamy. 2. Stir in cold water, set aside for later use. 3. In a large mixing bowl, combine flour, salt and oil.

  5. 4. Slowly stir in yeast mixture until soft dough is formed. 5. On a well-floured surface, knead dough until smooth and elastic. 6. Place in a large bowl that has been oiled for cool rise. (dough should double in size)

  6. Day 1 Pizza Sauce Ingredients • 1 ¾ C. (14 1/2-ounce) can diced tomatoes, undrained • 1 (6-ounce) can tomato paste • 1 tsp. sugar • ½ tsp. dried oregano • ¼ tsp. garlic salt • ½ tsp. dried basil • Pinch of crushed red pepper

  7. DIRECTIONS: 1. Combine all ingredients in food processor or blender and blend until desired consistency. 2. Leave slightly chunky if desired. 3. Adjust the seasonings to taste. 4. Place in large storage bag; label with class hour and kitchen number. Place in refrigerator for next day use.

  8. Day 2 Toppings • 1 ½ c. Mozzarella Cheese • 12 slices pepperoni • ½ lb. sausage, cooked • ¼ green pepper, diced • ¼ onion, diced Choose the ones you want. Write them on your lab packet.

  9. Day 2 – Directions 1. Remove dough from refrigerator. Punch dough down, knead. 2. Place dough on a lightly floured surface. Roll dough to desired shape. (Make bread sticks with extra dough) 3. Place dough on greased pizza pan. Pierce with fork. Bake for 5-10 minutes. 4. Top with sauce, cheese, meat and other desired toppings ordered. 5. Return to oven; bake 10-15 minutes at 450°F or until golden brown.
