  1. ingredients For Chole (Chickpea Curry): 2 cups of dried chickpeas (chole), soaked overnight 2 large onions, finely chopped 2 tomatoes, pureed 1 tablespoon ginger-garlic paste 2 green chilies, slit 2 teaspoons chole masala 1 teaspoon cumin seeds 1 teaspoon red chili powder 1 teaspoon turmeric powder 1 teaspoon garam masala 2 bay leaves 3-4 cloves Chickpea bowl 2 servings 2-3 cardamom pods 1-inch cinnamon stick 30 minutes 2 tablespoons oil Instructions Preparing the Chole: Cook Chickpeas: Boil chickpeas with water and salt in a pressure cooker (3-4 whistles) or pot until soft. Drain and set aside. Prepare Masala: Heat oil in a pan, add cumin seeds, bay leaves, cloves, cardamom, and cinnamon. Sauté until fragrant. Add Onions and Spices: Add onions and sauté until golden. Add ginger-garlic paste, green chilies, tomato puree, and cook until oil separates. Stir in chole masala, red chili powder, turmeric, and salt. Combine and Simmer: Add chickpeas, mix well, and simmer for 10-15 minutes. Add water as needed. Finish: Stir in garam masala and cook for 1 minute. Garnish with coriander leaves. Preparing the Chawal: Cook Rice: Boil water in a pot. Add rice, oil, and salt. Cook until rice is tender and water is absorbed. Fluff with a fork. Serving Serve the chole over the rice. Garnish with coriander and enjoy!
