  3. 用餐順序 中餐出菜順序: 1.開胃菜 2.主菜 3.點心

  4. 記憶力大考驗！ 親愛的同學們： 請大家回想一下剛才所看的 中餐餐具擺置圖， 猜猜看有哪些餐具!

  5. 餐具的安排 *餐巾置於左側。 *匙與筷置於右邊。 *筷子置於筷枕中,湯匙放於湯套中。 *水杯或酒杯置於右側上方。 *食盤及小湯碗置於中央。

  6. 宴會的開始 *主人邀請客人入座時,客人應從 左側入座 *賓客坐定位後,主人應起立向大家 敬酒致意, 表示宴會開始。

  7. 筷子的使用 *凡能以筷子取得到的食物，皆以 筷子夾取。 *若筷子夾不到的才用湯匙。 *先將食物夾入自己盤中再食用。 *不宜將筷子直立插在碗中央。 *不可拿著筷子比手畫腳與人交談。

  8. 湯匙的使用 *喝湯時宜用湯匙舀湯， 不宜以湯碗就口直接喝 。 *使用完畢，不宜將湯匙至於碗中， 應將湯匙歸於原位。

  9. 骨盤的使用 *骨盤是用來盛裝菜餚或菜渣，切忌 將殘餘的魚骨棄置在桌面地上。

  10. 使用公筷母匙 *中餐一般係以大盤裝菜， 大家 合食的方式，所以取用食物應 使用公筷母匙，並取用適量之 食物。

  11. 餐巾的使用 *餐巾應平鋪在大腿上 *餐巾之主要作用在於防止湯汁、 油缺等弄髒衣服， 故不可用來 擦餐具或擦臉。

  12. 用餐禮儀 *口中有食物時不宜再夾菜。 *右手夾菜或盛湯。 *左手同時端碗或托住盤子。 *餐畢,須將使用過的餐具歸於原 來位置。
