  1. Cutting Apples for top of French Apple Flan Core apple and cut in half (top to bottom). Turn apple onto flat side and slice evenly across core as shown.

  2. Cutting Apples for top of Normandy Apple Flan Overlap apples neatly over apple puree – working from right to left so skin shows. Tuck last few apple slices under for neatness.

  3. Strawberry Gateau Cream piped in shape of number 6 (or 9). Fanned strawberries. Cutting lines for 6 portions.

  4. Lemon Cheesecake Alternate black/green grapes. Cutting lines for 6 portions.

  5. Bar Gateau (birds eye view) Piped cream ‘stars’ Mandarin oranges

  6. Cream cheese stars Chicken twizzles Prawn and mange tout

  7. Sausage pinwheels Roll pastry to a rectangle. Place long side towards you.

  8. Sausage pinwheels Spread with sausage meat. Sprinkle with finely chopped onions or herbs. Wet far edge with water.

  9. Sausage pinwheels Roll up like a Swiss roll. Cut into 1cm slices with sharp knife.

  10. Sausage pinwheels Place flat side down on baking tray and allow room for spreading.

  11. Sausage rolls Roll pastry to a rectangle approximately 25cm wide.

  12. 25cm Sausage rolls Cut in half

  13. Sausage rolls Roll sausage meat out to same length as pastry. Place to the centre right (as shown). Wet one edge.

  14. Sausage rolls Fold pastry over sausage meat to form a ledge. Press firmly. Knock two pastry edges together, then fork down firmly.

  15. Sausage rolls Mark sausage rolls to required size. Brush with beaten egg. Snip top with scissors.

  16. Sausage rolls Place on baking tray to bake

  17. 1/3 bread roll 1/3 ham cheese or pâté 1/3 salad garnish Ploughman’s Lunch Butter Bread roll Pickle ‘Chunk’ of cheddar and stilton Salad garnish
